Recipe: Aunt Millie's Famous Kugel
Due to the overwhelming
response, I've been able to wrangle my Aunt Millie's famous
kugel recipe for everyone in cyberspace. For those of you who don't
know, kugel is not a thigh-squeezing exercise, but a pudding made
of noodles in a slightly sweet and rich filling. (Potato kugel does
exist but noodles are really my starch of choice... and obviously
Aunt Millie's).
So here's
her recipe, as I received it from her on a crimson recipe card,
with a lovely note about how the recipe has never really
been a secret...
Luchen Kugel
Boil, then
drain:
8 ounces
broad noodles (she advises to "put a capful of oil in the
water to
keep noodles separate)
Beat together:
3 eggs
1 cup sour cream
4 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/4 pound (1 stick) butter, melted (save a small amount aside
for the
topping)
1/4 pound cream cheese
Add noodles
and mix with above. Transfer to a greased 2-quart glass baking
dish.
Toss together:
1 cup crushed
cornflakes
ground cinnamon
sugar
reserved melted butter (from above)
Bake at 350
degrees for 1 hour, until golden brown.
